Potato Wedges (Jojos)

This recipe is meant to be a starting point. Adapt it as desired.


Ingredients

  • 4 large potatoes (e.g. Yukon gold, Russet)

  • 1/4 c oil

  • 1/4 c grated Parmesan cheese

  • 1 tsp salt

  • 1 tsp paprika

  • 1/2 tsp freshly ground black pepper

  • 1/8 tsp garlic powder


Directions

  1. Preheat the oven to 350º F. Line a baking sheet with parchment or foil.

  2. Cut the potatoes into 8 wedges. Add them to a large bowl and coat them with the oil.

  3. Combine the salt, paprika, pepper, and garlic powder. Sprinkle it over the potatoes, then sprinkle the cheese. Toss to coat the potato wedges.

  4. Spread in a single layer onto the baking sheet. Bake about 1 hour.
