Orzo with cherry tomatoes

Ingredients

  • 1 package of dried orzo

  • 1/2 - 1 c fresh cherry tomatoes

  • 2-3 TB red wine vinegar

  • 1 c freshly grated parmesan cheese

  • 1/4 c chopped parsley

  • 2 TB olive oil

  • 2-3 TB butter

  • Kosher salt and freshly ground black pepper

  • Optional: basil leaves, arugula

Directions

  1. In a large pot, boil water over high heat. Add Kosher salt to boiling water, then add orzo pasta. Stir a couple of times until the water comes back to a boil. Cook according to time on the box, until al dente.

  2. While pasta cooks, slice cherry tomatoes in half and macerate them in the red wine vinegar in a large bowl. Sprinkle with salt and stir.

  3. When the pasta is done, drain it and add to the bowl with the tomatoes and vinegar. Add all other ingredients. Stir to combine. Taste the pasta and adjust the salt, butter, etc.

  4. If using arugula leaves, combine them with the warm pasta so they wilt.

Note: Pairs well with Tilapia Piccata and Garlic Steak Bites.
