Ingredients
1 3/4 cups all purpose flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/3 cup butter, softened
2/3 cup brown sugar, packed
2 eggs
1 cup mashed bananas (2-3)
1-2 to 1 cup of chocolate chips
A few pats of butter and a little more brown sugar for dusting the top after baking
Directions
Preheat the oven to 350 degrees. Grease or butter all sides and bottom of a bread loaf pan.
In a large bowl, cream together the butter and sugar. Add in the eggs and combine thoroughly.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Add the flour mixture to the wet ingredients and mix until combined.
Add the bananas and stir on low until evenly distributed. If adding chocolate chips, do so now.
Transfer the batter to the loaf pan and spread it evenly. Sprinkle the top with brown sugar.
Bake for 1 hour. Immediately after removing it from the oven, sprinkle more brown sugar over the top and add a few dabs of butter all over. Let stand 5 minutes before removing the loaf from the pan.
Run a butter knife around the edges of the pan to loosen it. Gently tip the loaf onto a wire rack and set it upright. Cool at least 30 minutes before cutting into it.
Note: If you don't have quite enough banana add sour cream, plain yogurt, or applesauce to top up the 1 cup needed.
