Balsamic Vinaigrette Salad Dressing

This is an eyeball kind of thing once you get into the groove of making salad dressing. The proportions are up to your own taste.


Servings: Enough for 1 salad to serve 5-6 people


Ingredients

  • 1/4 cup olive oil

  • 2 TB balsamic vinegar

  • 1 tsp maple syrup

  • 1/2 tsp dijon mustard (or whole grain mustard)

  • pinch of salt

  • freshly ground black pepper

Directions

  1. Add all ingredients to a jar and shake to combine.

  2. Pour over the salad and toss.

Variations

  • Add 1 clove of smashed garlic. Let it sit for 30 minutes.

  • Add chopped herbs like chives, dill, parsley, etc.

  • Substitute honey for maple syrup -- it is harder to incorporate but tastes good.

  • Substitute red wine vinegar for balsamic or use a combination.

  • Add lemon juice for some of the vinegar.

  • Use canola or other non-flavored oil.

  • Adjust any proportion to your personal taste (more or less vinegar, sweetener, etc.).
