Yorkies

Also called Yorkshire Pudding and Popovers


Ingredients

  • 1 scant c flour

  • A good pinch of salt

  • 1 1/4 c milk

  • 3 whole eggs, lightly beaten

  • Oil with a high smoke point like avocado oil (do not use olive oil)


Directions

  1. Preheat oven to 450º F.

  2. Add about 1/4 inch of oil to each cup in a muffin pan. Preheat the oil in the 450º F oven for about 10 minutes.

  3. In a medium bowl, whisk together the flour and salt. Add the milk and eggs; mix to combine.

  4. Divide the batter between the preheated muffin pan cups. The batter will probably spatter in the hot oil.

  5. Place the muffin pan in the oven and bake for about 20 minutes. DO NOT OPEN THE DOOR AGAIN UNTIL THEY ARE DONE. The Yorkies will be deep golden brown and should puff up like little soufflés.

  6. Serve immediately.
