Watermelon Salad with Feta and Arugula

Ingredients

For the salad

  • 4 c watermelon, cut into 1-inch cubes

  • 4 c arugula

  • 8 oz feta, crumbled

  • 1 c basil or mint, torn


For the dressing

  • 1/4 c orange juice, freshly squeezed if possible

  • 1/4 c lemon juice, freshly squeezed if possible

  • 1/4 c minced shallots (~1 medium)

  • 1 TB honey

  • 1/2 c olive oil

  • 1 tsp salt

  • 1/2 tsp black pepper


Directions

  1. In a small bowl, whisk together the orange and lemon juices, shallot, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly to form an emulsion. If not using within the hour, store the dressing in the refrigerator (covered).

  2. Place the watermelon, feta, arugula, and basil in a large bowl. Drizzle with enough coat the greens lightly and toss well. Taste for seasoning and serve immediately.
