Greek Chicken

Ingredients

For the chicken

  • 4 large chicken breasts (boneless, skinless)

  • olive oil

  • salt

  • 1 tsp dried basil (optional)


For the cheese topping

  • 8 oz feta cheese (preferably in brine)

  • 1/2 c kalamata olives, pitted

  • 1/4 c olive oil

  • freshly squeezed lemon juice from 1/2 lemon


Directions

  1. Preheat the oven to 350ºF. Line a baking sheet with parchment paper or foil for easier clean up.

  2. Slice the chicken breasts into about 1.5-inch strips agains the grain starting with the thinnest side (usually about 5 strips per chicken breast).

  3. Arrange the chicken on the baking sheet and drizzle with olive oil. Coat evenly. Sprinkle with salt and basil.

  4. Bake for 18-20 minutes until just cooked (chicken can also be grilled -- just don't over cook it!).

  5. While the chicken is cooking, crumble the feta into a bowl. Slice the kalamatas into fourths and add to the feta. Drizzle in the olive oil and squeeze the lemon over the mixture. Stir to combine.

  6. When chicken is done, spread the feta mixture over the chicken while it is still warm.

  7. Serve with Pearled Couscous, pita (or naan), and a greek salad.
