Ingredients
3-4 lbs pork shoulder, cut into 3-inch cubes
1/2 c lime juice, freshly squeezed
1/2 c lemon juice, freshly squeezed
1 TB ground cumin
1 TB garlic powder
1 1/2 tsp salt
1 tsp ground coriander
1 tsp freshly ground black pepper
1 tsp ground cayenne pepper

Directions
In a small bowl, mix the spices: cumin, garlic powder, salt, coriander, black pepper, and cayenne pepper.
Coat the pork with the spice mixture (this can be done by shaking everything together in a large Ziplock bag).
In a large, deep sauté pan, add the lime and lemon juices, then the seasoned pork cubes. Add water just to barely cover the meat. Bring to a big boil then turn the heat down and simmer uncovered for about 2 hours when all the water evaporates.
Turn up the heat and brown the meat in the rendered fat left in the pan, chopping as you go (if desired).
Note: This pork can be served with tortillas or with a starch like rice. Add some fresh cilantro and pickled onions.
