Nut Burgers

Servings: 4 burgers


Ingredients

  • 1 cup cooked brown rice

  • 3/4 cup sunflower seeds

  • 3/4 cup walnuts

  • 1 small carrot, grated finely

  • 2 TB tomato sauce

  • 1 tsp cumin

  • 1 tsp oregano

  • 1-2 tsp cold-pressed oil

  • 2 cloves garlic, finely chopped

  • 1/8 tsp cayenne

  • 4 whole grain hamburger buns

Directions

  1. Grind the nuts and seeds to a fine meal in a small grinder or food processor. Pour into a bowl and add cumin, oregano, cayenne, and garlic. Mix well.

  2. Fold in the cooked brown rice. Add tomato sauce a little at a time until you get a stiff, but workable texture.

  3. Form the mixture into patties with moist hands. Refrigerate the patties for a few hours if possible.

  4. Lightly coat a skillet with oil and brown the patties on both sides.

  5. Serve on whole grain buns with all your favorite toppings.
