Ingredients:
1 1/2 c quick-cooking oats
1/2 c creamy peanut butter (or almond butter)
1/2 c chia seeds
1/2 honey
1/4 c vanilla or chocolate protein powder
1/4 c unsweetened shredded coconut
Additional shredded coconut for rolling (optional)
Directions:
In a large bowl, combine the first 6 ingredients. Refrigerate for 1 hour or until firm enough to roll.
Shape the dough into 1 1/2-inch balls. Roll them in additional coconut if desired.
Store in the refrigerator.
