PB Protein Balls

Ingredients:

  • 1 1/2 c quick-cooking oats

  • 1/2 c creamy peanut butter (or almond butter)

  • 1/2 c chia seeds

  • 1/2 honey

  • 1/4 c vanilla or chocolate protein powder

  • 1/4 c unsweetened shredded coconut

  • Additional shredded coconut for rolling (optional)


Directions:

  1. In a large bowl, combine the first 6 ingredients. Refrigerate for 1 hour or until firm enough to roll.

  2. Shape the dough into 1 1/2-inch balls. Roll them in additional coconut if desired.

  3. Store in the refrigerator.
